Zucchini – the rehydrator

As you know, I am all about eating in season…and Zucchini my friends, is IN this summer!

One of the best things about these green gems is their high water, and low calorie content.  So just perfect for rehydration over the summers warmth. Zucchini also contains phytochemcials of carotenoids which give photoprotective benefits. It is also a good source of dietary fibre, which every gut needs to be happy.  The most nutrient dense part is the skin  - so don’t shed it, savour it! Your skin will thank you.

I like zucchini done ANYWAY; ‘zoodles’ (zucchini noodles), grated, steamed or in a soup. But my favourite way is Jess Sepels Zucchini Hummous! Especillay as it also contains turmeric my most praised anti-inflammatory ingredient of all time. Couldn’t get a more skin friendly combination.

Heres how to make it:

 Ingredients:

  • 2 organic zucchinis, chopped
  • 1/2 cup tahini (hulled)
  • 1 lemon ( juice)
  • 2-3 tbsp olive oil
  • 2-3 tbsp water
  • 1/2-1 tsp chilli flakes
  • 1 garlic clove, chopped
  • 1/2 tbsp cumin
  • 1 tsp turmeric
  • 1 tsp Himalayan sea salt
  • Pepper

Method:

Put the above into your food processor! Add more oil or water for your desired consistency.

How to eat it?

Great as a dip for your veggies,  a yummy pasta sauce or as a spread for your toast!
